Why does chicken soup turn into like jelly when in the fridge? is it healthy if it does that?

Answer:

Cooking of the bones and the cartiliage gives off the gelatin and thus the cold broth becomes gelatinous and looks like clear jelly. It is actually a sign of a good broth. The fat also solidifies and that has an opaque yellowish color and appears quite solid. You an remove that, which is not healthy but keep the gelatin, that is flavorful and healthy.
